Green Lentil Stew
Hearty green lentils with potato and a splash of vinegar
Ingredients
- 1 glass of green lentils
- 1 large onion
- Tomato paste
- 1 clove of garlic
- 1 tiny potato, diced small (if you have one)
- Black pepper
- about 4¼ cups boiling water
- Half a spoon of vinegar
- Salt
- Oil, for sautéing
Method
- Boil the green lentils about 10 minutes; drain.
- Sauté the onion in oil, then stir in the tomato paste.
- Add the garlic last so it doesn't burn, then the diced potato if using.
- Add black pepper.
- Add the drained lentils, stir once or twice, then pour in about a liter of boiling water (about 4¼ cups).
- Stir in the vinegar.
- Cook at least 40 minutes (it varies by lentil); don't forget the salt.
Notes
- The garlic goes in last so it doesn't burn.
- Cooking time varies by lentil — at least 40 minutes.
- About a liter of water (about 4¼ cups).
