Tavuklu Pilav
Chicken-topped rice, stovetop style
Ingredients
- A small handful of orzo
- 2 tbsp butter
- A drizzle of oil
- about 2⅓ cups rinsed rice
- 3½ cups hot chicken broth
- Shredded chicken
- Salt, if needed
Method
- Toast the handful of orzo in 2 tbsp butter plus a drizzle of oil in a pilav pot over medium heat until deeply golden.
- Add about 2⅓ cups rinsed rice and stir for 1–2 minutes, until the grains turn glossy.
- Add 3½ cups hot chicken broth and salt if needed, and bring to a boil.
- Lower the heat to the barest simmer, cover with the lid, and cook until the liquid is absorbed, 12–15 minutes. Don't lift the lid.
- Lay the shredded chicken over the top.
- Rest 10 minutes off the heat with a paper towel between the pot and the lid, then fluff and serve.
Notes
- Toast the orzo until deeply golden; that's where the flavor comes from.
