Chicken-Orzo Soup
Silky, lemony chicken soup with orzo
Ingredients
- 1½ tbsp butter
- A drizzle of oil
- 2 heaped tbsp flour
- 6 cups strained homemade chicken broth
- about 1½ cups shredded chicken
- about ⅓ cups dry orzo (about 5 tbsp)
- juice of 1 lemon
- Salt and black pepper
Method
- Melt 1½ tbsp butter in a pot with a drizzle of oil.
- Add 2 heaped tbsp flour and sauté, stirring, until toasty and the raw-flour smell is gone.
- Add the shredded chicken now (or later, with the orzo).
- Slowly pour in 6 cups strained homemade chicken broth, stirring, until smooth and lump-free.
- Bring to a boil and add about ⅓ cups dry orzo.
- Squeeze in juice of 1 lemon while it cooks.
- Simmer about 15 minutes, until the orzo is tender.
- Season with salt and black pepper, and serve promptly.
Notes
- Serve right away — the orzo keeps drinking up the broth as it sits.
- Go easy on the orzo; it swells a lot more than it looks dry.
